Spinach quiche (gluten & oil free)
This quiche is super healthy without sacrifycing the taste! It is hearty, soft and moist, a real pleasure to bite into it 😍
It is made with a gluten free, whole food base while the filling features chickpea flour and silken tofu, to resemble cooked egg, and obviuosly veggies (in this case i used spinaches but other greens can be used).
Ingredients
For the base
Rice flour | 100g or 1/2 cups |
Buckwheat flour | 30g or 1/4 cups |
Cashew butter (or other nut butter) | 20g or 2 Tbsp |
Flaxseed powder | 1/2 Tbsp |
Water | 50g or 1/4 cups |
For the filling
Chickpea flour | 220g or 2 cups |
Silken tofu | 200g |
Nutritional yeast | 15g or 1/4 cups |
Cashew butter | 20g or 2Tbsp |
Spinaches | 500g |
Water | 430g or 2 cups |
Salt and spices (turmeric, black pepper, garlic powder, paprika, kala namak) | add to taste |
Vegan cheese | optional, add to taste |
Method
- Preheat the oven to 180° C
- Prepare the base by mixing all the ingredients together and kneading the dough for a couple of minutes. Then set aside, covered (with either a damp towel or plastic film)
- Cook the spinaches in a pan for a few minutes and drain the liquid in excess. If using frozen, defrost them and then also drain the liquid
- Mix all the ingredients of the filling in a bowl
- Roll the dough on a piece of parchement paper and then transfer it in a cake/pie pan. Then pour the filling onto the base
- Place the pan in the oven and cook for around 45 minutes or until cooked. You can optionally turn on the grill function for the last couple of minutes
