Quiche

Spinach quiche (gluten & oil free)

This quiche is super healthy without sacrifycing the taste! It is hearty, soft and moist, a real pleasure to bite into it 😍

It is made with a gluten free, whole food base while the filling features chickpea flour and silken tofu, to resemble cooked egg, and obviuosly veggies (in this case i used spinaches but other greens can be used). 

Ingredients

For the base
Rice flour100g or 1/2 cups
Buckwheat flour30g or 1/4 cups
Cashew butter (or other nut butter)20g or 2 Tbsp
Flaxseed powder1/2 Tbsp
Water50g or 1/4 cups
For the filling 
Chickpea flour220g or 2 cups
Silken tofu200g
Nutritional yeast 15g or 1/4 cups
Cashew butter20g or 2Tbsp
Spinaches500g
Water430g or 2 cups
Salt and spices (turmeric, black pepper, garlic powder, paprika, kala namak)add to taste
Vegan cheeseoptional, add to taste

Method

  1. Preheat the oven to 180° C 
  2. Prepare the base by mixing all the ingredients together and kneading the dough for a couple of minutes. Then set aside, covered (with either a damp towel or plastic film)
  3. Cook the spinaches in a pan for a few minutes and drain the liquid in excess. If using frozen, defrost them and then also drain the liquid
  4. Mix all the ingredients of the filling in a bowl
  5. Roll the dough on a piece of parchement paper and then transfer it in a cake/pie pan. Then pour the filling onto the base
  6. Place the pan in the oven and cook for around 45 minutes or until cooked. You can optionally turn on the grill function for the last couple of minutes
