Placinta de mere (gluten free)
Placinta de mere is a classic and popular dessert in Romania. I have seen it in various occasions so when I had more than 1 kg of apples on hand (that really needed to be used up) I decided to give this recipe a try!
I couldn't find a recipe that was both vegan and gluten free so I went ahead and veganized one that I found on the internet by substituting sour cream (smantana) for coconut yogurt, butter for margarine and eggs for flax eggs.
Ingredients
Dough
Gluten free flour blend | 650 g |
Vegan butter | 250 g |
Sugar | 200 g |
Coconut yogurt | 200 g |
Soy milk | 100 mL |
Baking powder | 10 g |
Flax eggs | 2 |
Baking powder | 1 tsp |
Salt | a pinch |
Filling
Apples | 1 kg |
Sugar (brown or white) | 100 g |
Cinnamon | 1 Tbsp |
Lemon juice | of a small one |
Instructions
- The preparation of the dough is very easy: just mix all the ingredients together and knead them for a little bit until everything is well incorporated. Then cover with plastic film and set aside while preparing the filling
- For the filling you will have to clean and grate all the apples. Put them in a sauce pan with sugar and cook them until the juice they released is evaporated. Then you can add the cinnamon and mix
- Turn on your oven to 180° C
- Place half the dough on a sheet of parchement paper and roll it with a rolling pin to about 0.5 cm of height, then cut it into a rectangle that is precisely the shape of your pan
- Lay the dough inside the pan and add the filling on top
- Roll the other half in the same way then and use it to cover the filling in the pan
- Put it in the oven and cook for about an 45 minutes but make sure you check it also at 30 minutes
- Leave it to cool and then cut it into squares (about 4x4 cm or a little less), finally sprinkle on some powdered sugar and enjoy!
